Pat Watkins’ Christmas Pudding
- 1 ½ c. suet
- 1 tsp allspice
- 2 c. sugar
- 1 tsp cinnamon
- ¾ puffed raisins (laxia)
- 1 tsp vanilla
- ¾ seedless raisins
- 3 tsp baking powder
- 1 c. currants
- 1 c. flour
- 4 apples, grated (coarse grated and Granny Smith are best)
- 5 eggs
- 3 c. soft white bread crumbs
- 1 tsp nutmeg
Beat eggs. Add sugar and beat. Add flour, spices, baking powder, and then bread crumbs, then add dried (on paper towels) raisins and currants, then add suet. Lastly, grated apples. Steam 3 to 4 hours (less time if smaller containers are used).
